Mini-macaroni and cheese pots

To say I love cheese is a gross understatement.  I adore it.  So it’s no surprise that Macaroni and Cheese is one of my favorite dishes.  Because it’s one of my go to sides, I like to mix things up a bit by adding extra layers of flavor like bacon and sautéed onions.  Serving these in individual pots makes it even more special.

IMG_0807First cook 2 – 3 slices of bacon, chop them and set aside.  Afterwards, sauté about 2/3 of a sliced onion in the rendered bacon fat.  Then add any and every cheese in the fridge to a traditional béchamel sauce (I use this recipe but substitute half of the milk with heavy cream).  In the pots pictured I used a mixture sharp cheddar, mozzarella, pepper jack and goat cheese.  After adding spices to the sauce (I use salt, pepper, garlic powder, creole seasoning and Chinese Five Spice) mix the cheese sauce, chopped bacon, sautéed onions and cooked pasta. Top the pots with seasoned breadcrumbs, grated Parmesan cheese, crushed French’s Fried Onions and pats of butter.  Bake at 350 degrees for 15 – 20 minutes and enjoy!
